Because if I see another bowl of cereal, I will cry. And I love my steel-cut oatmeal, but the 25 minutes it takes to cook is like, an eternity. Sometimes you can't make that kind of commitment. And sometimes you don't want to use the stovetop, because, say, you don't want to handwash a frying pan from last night's dinner that didn't get loaded into the dishwasher. But Mama needs to eat. So here you go.
Into a cereal bowl--one with a rounded bottom will make for easier egg removal--break an egg and add a tablespoon of milk. Beat the egg with a fork. Put bowl in microwave and cook for 3 minutes on 50% power. (Cook for slightly less time if you like it a little softer or if the egg is smaller. Sometimes I do 2 and-a-half minutes.)
While your egg is cooking, toast two pieces of bread. When the microwave beeps, you will have a light and fluffy egg patty. Slide a fork under the edge of the egg and loosen it from the bowl. Careful! The bowl is hot. Ease the egg out onto your bread, and you are ready to rock. Add cheese, mayonnaise, salt 'n pepper, it's up to you. Warm and delicious.
My seven year-old likes eggs this way, and she can make it herself. She loves breaking and beating eggs, but I still handle getting it out of the bowl. It's yummy on a Works for Me Wednesday!

What a great idea =)
I do the exact same thing, only I don't scramble the egg! I like my egg on an English muffin with a slice of cheese. :)
What a great idea. I agree...sometimes cereal just doesn't cut it. I will try this for sure!
Carrie
I'm making this in the morning!
Never cooked eggs in the micro before.
Hmmm
When I was pregnant with my first kid I had a microwaved egg every morning. It was the only way I could feel decent.
Well, check you out! That looks yummy. I agree, too--it looks palatable to my preggo tummy, too. Thanks, Beck!
I hope you like it, ladies! I started doing this when I was pregnant too! Gotta have your protein. Scrappy, I'm going to try it sunny side up. For some reason, I thought I had to scramble it. It's good to branch out.
Oh, I love this idea! But the few times I have done egggs in the micro they have stuck to the bowl much more than I would like. And you know that cleaning off baked on egg is awful. Does that happen to you?
Hey Kimberly, I find that if I don't cook it too long (i.e., more than 3 minutes), and if I take it out right away and not let it sit in the bowl, there is almost no egg left in the bowl. Then I just put the bowl in the sink with a little water in it.
Or, if you really wanted to ensure no sticking, you could beat the egg in a separate container, and then pour it into a bowl you've sprayed with Pam. I haven't done that, but it should work!
Sheer brilliance.
I know what I'm having for breakfast. (And maybe with a Morningstar Farms sausage patty... yummmm.)
Wow - didn't know this could be done! I'll give it a try - my boys LOVE eggs for breakfast.
That is quick and easy... I may have to try that tomorrow morning... breakfast in a bowl done fast!
Thanks!
I'm totally doing this tomorrow. I've never heard of it...thanks for a great idea!!!
Good texture for toddler finger food, too! It cuts into nice fluffy little squares that are easier to pick up than scrambled-in-the-pan eggs. (psst - add a little shredded cheese in there)
My kids survive on microwaved eggs in moments of hunger and frenzied rush. They microwave the egg and top with ketchup - sometimes plop the thing on toast. Best part is that I don't have to help them!
The Matron is addicted to her carbs in the morning -- she's all bagel, oatmeal and granola. Forever.
Just to add...I tried this for dinner tonight--yum! I added some cheese and a spoonful of salsa. Sacrilege to some, but it was tasty! My egg didn't come out as pristinely as yours, but that may be cause of the extra stuff I added. Thanks for the tip, Beck!
I made these this morning for my 2 toddlers It's perfect! I think this method is a keeper. Thanks!
Hi! I know this is from a year ago, but if you haven't learned this trick already: mix up yr steel-cut oats & water the night before. Bring it to the boil, turn it off. Put the lid on & go to sleep. In the morning, just heat it, poke it around a little, takes 5 minutes. Fall is coming!
